Ingredients for 6 servings:

  • 500 g minced meat (beef)
  • 1 large onion(s)
  • 1 garlic clove(s)
  • some oil for frying
  • 2 large red peppers
  • 1 stalk(s) leek
  • 1 liter broth, maybe more or less
  • 250 g tomatoes, pureed
  • 200 g cream
  • some salt
  • some pepper and/or cayenne pepper
  • some paprika powder

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Dice the onion and finely chop the garlic clove. Cut the bell pepper into thin strips and the leek into not-too-thick half rings. Brown the minced meat with a little oil, the onions, and the garlic in a large pot and season with salt. Then add the bell pepper and leek to the minced meat and sauté for about 5 minutes. Pour in the broth and stir in the passata, then simmer for 30 minutes. Then add the cream and season with pepper, paprika, and salt. The soup tastes delicious and is perfect as a midnight snack at a party or as a warm snack after a hike.
