Pasta in pumpkin sauce

Ingredients for 2 servings:

  • 600 g pumpkin(s)
  • 2 onions
  • 1 garlic clove(s)
  • 1 vegetable stock cube
  • 200 g pasta, short pasta
  • oil
  • 2 cups water

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Remove the outer skin from the pumpkin. Cut the pumpkin into smaller pieces and then process in a blender to create a pumpkin paste. Finely chop the onions. Press the garlic with a press. Sauté the oil, onions, and garlic in a pot. Then add the pumpkin paste and about 1-2 cups of water to create a proper paste. Add the stock cube. Stir frequently and simmer on low heat. Once the pumpkin paste has boiled and the water is nice and hot, add the pasta (preferably short and thin pasta – not spaghetti!) and stir occasionally. The pasta should cook briefly so that it becomes soft or al dente more quickly. Season to taste or add a little white wine.
