Ingredients for 2 servings:

  • 1 onion(s)
  • 1 garlic clove(s)
  • 1 tbsp oil
  • 200g spaghetti
  • 250 g leaf spinach, frozen
  • 200 g cooked ham
  • 125 g mozzarella, (mini)
  • 400 ml milk
  • 3 m.-sized eggs
  • salt and pepper
  • Fat, for the muffin tray

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour

Peel and finely dice the onion and garlic. Heat oil in a saucepan. Sauté the onion and garlic. Add the spinach and 5 tablespoons of water. Cover and sauté over low heat for about 15 minutes, stirring occasionally. Meanwhile, cook the spaghetti in 2 liters of boiling salted water according to the package instructions. Drain, refresh in cold water, and let drain. Grease the holes in a muffin tin. Cut the ham into thin strips. Whisk the milk and eggs. Season with salt and pepper. Season the spinach with salt and pepper. Preheat the oven (electric oven: 175°C/fan: 150°C/gas: see manufacturer). Mix the pasta, ham, and spinach and divide them into the holes. Pour the egg wash over the pasta. Drain the mozzarella, cut each ball in half, and arrange it on top of the pasta. Bake in the hot oven for 20–30 minutes until golden brown. Allow to cool briefly, remove from the molds and serve.
