Pasta salad Herzi style

Ingredients for 4 servings:

  • 150 g penne, but smaller ones like Gemelli are better
  • 1 tsp salt
  • 500 g bell pepper(s), red and yellow
  • 250 g zucchini
  • 2 garlic cloves, finely diced or chopped
  • n. B. Thyme
  • pepper
  • Paprika powder
  • 5 tbsp olive oil
  • 5 tbsp white wine vinegar
  • 100 g arugula
  • 150 g feta cheese
  • 1 spring onion(s), cut into fine rings

Instructions

Working time approx. 30 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 30 minutes

very tasty pasta salad without mayo and without broth

Cook the pasta in salted water, dice the bell peppers and zucchini. Heat the oil in a pan and fry the bell peppers for about 4 minutes, then add the zucchini, garlic, and thyme and fry for 2 minutes. Deglaze with the vinegar, season with paprika, and mix with the now slightly cooled pasta. Let everything cool. Trim the arugula, trim the ends if necessary, wash, and drain. Then toss it into the salad and season again with vinegar and spices if desired. Finally, crumble/chop the feta cheese and fold it in along with the leek rings. Other variations are certainly possible.
