Pasta Scampi e Spinaci alla Vapiano

Ingredients for 2 servings:

  • 300g spaghetti or tagliatelle
  • 25 ml cream or cremefine for cooking
  • 75 ml broth
  • 5 king prawns, frozen
  • 125 g leaf spinach, frozen
  • 1 small onion(s)
  • 2 cloves garlic
  • 1 tsp pesto verde
  • 1 tbsp Parmesan
  • some salt
  • chili

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Pasta with king prawns and leaf spinach in a creamy sauce – delicious like at Vapiano

Cook the pasta in plenty of water until al dente. Fry the frozen prawns in very hot oil. After a short time, add the finely chopped onions, crushed garlic, and a little chili, if desired. Continue frying the prawns to the desired degree of browning. Mix the cream with the stock in the pan, add a teaspoon of pesto and the frozen spinach leaves. Simmer until the spinach is thawed. Season with salt and pepper to taste and add the Parmesan cheese. Drain the pasta, then toss it in the pan with the sauce. Serve and sprinkle with additional Parmesan cheese, if desired.
