Ingredients
Basic recipe for pasta with durum wheat semolina
- 200 g Wheat flour
- 200 g Durum wheat semolina
- 200 ml. Cold water
additionally
- 3 tablespoon Spinach vegetable powder
- 0,5 teaspoon Salt
to round off
- 150 g Grana Padano
- Tomatoes
- Basil
- Smoked olive oil
Instructions
My pasta with the pasta machine
- Select the desired pasta attachment (tube large) and attach. Then put the dry ingredients in the pasta machine and let it automatically calculate the amount of liquid. Press the power button and as soon as the machine starts to run, let the water run in slowly. I made the tubes about 2 inches long. Simply cut off the dough with a knife after it has reached its size until everything is processed.
- When all the tubes are ready, put them in a saucepan with boiling water and let them cook for about 10 minutes. Then drain the pasta. Save some of the water.
- In the same pot in which the pasta was cooked, smoked olive oil - basil and small tomatoes are placed. Set the heat to the highest level and heat the oil well through once. Then reduce to half the heat and lightly stew the basil and tomatoes. Melt the freshly grated Parmesan with the ingredients in the saucepan, approx. 100 grams. Then put the pasta on top and let it through well. Possibly add a little more oil. Finally, they give up another Parmesan shovel and put the pasta on the plate. Freshly ground chilli or pepper round off the dish.
