Pasta with asparagus

Ingredients for 4 servings:

  • 1 kg asparagus, white
  • 400 g asparagus, green
  • 250 g cooked ham
  • 750 ml hollandaise sauce
  • 1 tbsp sugar
  • 3 dashes lemon juice
  • n. B. Salt
  • n. B. Pfeffer
  • 2 tbsp oil for frying
  • 500 g pasta

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

Peel the white asparagus and cut into 2 cm pieces, leaving the asparagus heads whole and setting them aside. Snap off the woody ends of the green asparagus and peel the lower third. Cut the asparagus stalks into 2 cm pieces, leaving the asparagus heads whole and setting them aside. Heat oil in a pan and add the white asparagus pieces, frying over medium heat. After 3 minutes, add the green asparagus pieces to the pan. Season the asparagus with salt, pepper, sugar, and lemon juice. Then add the asparagus heads and continue frying over low to medium heat. Meanwhile, cook the pasta according to the package instructions until al dente and drain. Dice the cooked ham, add to the asparagus, and fry. When the asparagus is soft but still slightly firm, add the hollandaise sauce and mix everything thoroughly. If you like, you can add the cooked pasta to the asparagus sauce or serve the pasta separately with the asparagus pan.
