Pasta with beef fillet strips, tomatoes and spinach

Ingredients for 2 servings:

  • 250 g pasta
  • 150 g beef fillet(s)
  • ½ onion(s)
  • 300 g cherry tomatoes
  • 100 g leaf spinach, frozen
  • 1 garlic clove(s)
  • 1 tbsp tomato paste
  • 100 ml red wine
  • 50g mozzarella
  • salt and pepper
  • some oil for frying

Bring the pasta water with salt to a boil and cook the pasta according to the package instructions. Meanwhile, cut the beef fillet into strips, fry them in a little oil, season with salt and pepper, remove from the pan and keep warm. In the same pan, sauté the finely chopped onion in a little oil until translucent, then add the halved cherry tomatoes and spinach. After about 5 minutes, add the tomato paste and finely diced garlic and fry briefly. Then deglaze the vegetables with the red wine and, when the wine has evaporated, add the shredded mozzarella. Season the dish with salt and pepper. Spoon the vegetables over the pasta and serve, garnished with the beef fillet strips.
