Pasta with beetroot

Ingredients for 4 servings:

  • 3 yellow beets
  • 500 g pasta
  • 200 g sheep’s cheese
  • 4 tbsp sour cream
  • 200 ml vegetable stock
  • salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 1 hour 10 minutes; Total time approx. 1 hour 20 minutes

Wash the beets and wrap each one individually in aluminum foil. Bake in the oven at 200 degrees Celsius (400 degrees Fahrenheit). This takes approximately 45-60 minutes, depending on their size. When they are tender, remove them and cut into pieces. Cook the pasta in salted water according to the package instructions. Sauté the beets in a little olive oil. Then deglaze with the vegetable stock. Add the sour cream and season the sauce. Serve the pasta with the beets and sprinkle with the feta cheese. This goes very well with a salad.
