Pasta with broccoli

Ingredients for 4 servings:

  • 500 g broccoli
  • 400 g pasta e.g. penne
  • 1 red bell pepper(s)
  • 1 clove(s) garlic
  • olive oil
  • salt and pepper
  • 4 tbsp Parmesan, grated
  • 2 tbsp breadcrumbs
  • 2 tbsp hazelnuts, grated

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 55 minutes

Clean the broccoli and divide it into florets, peel the stalks, and slice them. Cook everything in salted water for about 10 minutes. Strain the broccoli from the water and rinse under cold running water. Cook the pasta in the broccoli water until al dente. In the meantime, finely dice the bell peppers. Finely dice the garlic clove. Add a little olive oil to a pan and briefly fry the bell peppers and garlic. Add the pasta and broccoli and mix everything together. Sprinkle everything with grated Parmesan cheese and mix in. If desired, add a little of the pasta water. In a small pan, toast the breadcrumbs and grated hazelnuts in a little olive oil. Arrange the pasta and broccoli on plates and sprinkle with the breadcrumbs and hazelnut mixture.
