Pasta with cheese and nut sauce

Ingredients for 4 servings:

  • 180 g walnuts
  • 3 tbsp pine nuts
  • 1 garlic clove(s)
  • 50 g butter
  • 2 tbsp cream (Panna da Cucina – Italian cooking cream)
  • 80 ml vegetable stock
  • salt and pepper
  • 400 g pasta
  • salt water
  • 100 g Parmesan, grated

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Finely chop 150g walnuts and 1 tbsp pine nuts. Roughly chop the remaining walnuts and pine nuts and toast them in a dry pan. Chop the garlic and fry it in the butter with the finely chopped walnuts and pine nuts. Add the panna da cucina, vegetable stock, and 50g Parmesan cheese and simmer for 3 minutes. Cook the pasta in salted water, drain, and reserving 50ml of the pasta water. Return the pasta to the saucepan, stir in the sauce and pasta water, and season. Serve the pasta with the toasted nuts and the remaining Parmesan cheese.
