Pasta with shrimp and dates

Ingredients for 2 servings:

  • 250 g pasta (Barilla Bavette n. 13)
  • 90 g shrimp(s), organic
  • 2 garlic cloves
  • 1 onion(s), red
  • 3 tbsp olive oil
  • ½ small chili pepper(s), yellow
  • 1 handful of pine nuts
  • 10 olives, black
  • 10 dates, dried
  • 70 g tomatoes, dried
  • Parmesan, optional
  • Pepper, freshly ground, optional

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

quick and especially tasty

Mince the garlic. Slice the onion into rings. Deseed and finely chop the chili pepper. Toss everything with a little olive oil. Cook the pasta until al dente. Roast the garlic, onion, and chili mixture in the pan with the shrimp for 5 minutes. Meanwhile, chop the olives, dates, and sun-dried tomatoes. Add the pine nuts and olive oil. Serve the finished pasta with the shrimp and the date mixture. Garnish with freshly ground pepper and Parmesan cheese, if desired.
