Pasta with spicy spinach and pine nuts

Ingredients for 4 servings:

  • 400g spaghetti
  • 2 onions, finely diced
  • 3 garlic cloves, finely diced
  • 1 large pepper, red, mild, chopped (alternatively 1 tsp sambal oelek)
  • 2 tbsp pine nuts, heaped tbsp, chopped
  • 800 g spinach, fresh, blanched, roughly chopped
  • pepper
  • 2 tbsp butter
  • Parmesan
  • nutmeg
  • Salt

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 12 minutes; Total time approx. 22 minutes

Cook the spaghetti. Meanwhile, sauté the finely diced onions and garlic in heated olive oil. Sauté the chopped peppers and pine nuts. Add the blanched, torn, or roughly chopped spinach, and season with salt and pepper. Stir in the dripping wet pasta, grated Parmesan cheese to taste (not too much), butter, and nutmeg.
