Ingredients for 3 servings:
- 250 g pasta
- 1 jar of ajvar
- ½ eggplant(s)
- 3 carrots
- 100 ml cream, vegan
- 2 cloves garlic
- salt and pepper
- vegetable broth
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes
Cook the pasta according to the package instructions. Finely chop the garlic and fry in a little oil. Add the diced eggplant and carrots and fry briefly. Add the ajvar and cream. Simmer over medium heat for a while, stirring occasionally, until the vegetables reach the desired consistency. Season to taste. Pour the sauce over the pasta and serve. Tip: The quantities can be adjusted.
