Pasta with vegetables in tomato and cream cheese sauce

Ingredients for 4 servings:

  • 300 g tagliatelle pasta
  • some butter
  • 2 carrots
  • 2 zucchinis
  • 6 tomatoes
  • 1 garlic clove(s)
  • 1 tbsp tomato paste
  • 150 g goat’s cheese
  • 2 tbsp, heaped Parmesan, grated
  • 2 tbsp olive oil
  • e.g. salt and pepper
  • n. B. Herbs, Italian
  • n. B. Spice mix (garlic-chili spice)

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 55 minutes

Cook the tagliatelle in salted water according to the package instructions, rinse well, and toss in a pan with a little butter. Cover and set aside. Peel and finely slice the carrots. Wash the zucchini and cut or slice thinly. Wash the tomatoes, chop them up a bit, and then puree them. Feel free to add any seasonings you like. Crush or chop the garlic and add it to a pan. Add the vegetables and sauté. After about 5 minutes, stir in the tomato paste. Then add the pureed tomatoes and let everything simmer again over low heat. Stir in the goat’s cheese and sprinkle the Parmesan over the top and mix in. Season to taste or use seasonings of your own choice. Add the pasta to the pan and stir in. A green salad goes well with this!
