Penne Casserole with Zucchini, Feta and Turkey Fillet

Ingredients
 

  • 300 g Pasta penne
  • Salt
  • 1 tsp Brown sugar
  • 1 Onion, diced
  • 1 Can Chopped tomatoes
  • 200 g Zucchini
  • 2 tbsp Tomato paste
  • 1 shot Vinegar
  • Marjoram fresh
  • 500 g Turkey breast fillet
  • Telly cherry pepper
  • 1 tbsp Sweet paprika powder
  • 1 tsp Garlic pepper
  • 1 tsp Seasoned salt
  • 1 tsp Mace
  • 1 tsp Fenugreek powder
  • 250 g Feta
  • Rapeseed oil
  • Fresh thyme
  • Fresh oregano
  • Fresh basil
  • 200 g Grated cheese

Instructions
 

  • First cook the penne in salted water until it is firm to the bite! Let cool down! Wash the zucchini, dice it. Peel and finely chop the onion and garlic!
  • Heat the oil in a saucepan and caramelize the garlic with sugar and a little salt. Then briefly toast tomato paste! Then add zucchini. Fry for 5 minutes! Then add diced tomatoes and bring to the boil briefly! Season to taste with seasoned salt, garlic pepper, pepper, fenugreek! Add a dash of vinegar and fresh marjoram! Let cool down!

Correctly remove the fillet from the tendon:

  • Place the turkey fillet horizontally on a board. Scrape the fillet horizontally along the tendon with a sharp meat knife, do not cut! This is how you get more meat! Then cut it in half! See pictures! Lay the fillet so that the tendon is facing you! Then slide the knife behind the string and remove the string completely! The halved fillet can now also be used wonderfully as sinew-free steaks!
  • Finely dice the fillet and season with pepper, garlic pepper, seasoned salt, mace and paprika powder! Put the oil in a pan and briefly sear the cubes on all sides! Let cool down!
  • Finely dice the feta. Wash and chop herbs!

Preheat oven to 220 degrees!

  • Now mix the penne, tomato and zucchini sauce, fillet cubes, turkey cubes and feta crumbs and fresh herbs in a bowl! Possibly season again with salt, pepper, garlic pepper!
  • WITH VINEGAR AND OIL YOU CAN ALSO USE THE MIXTURE FOR A GREAT SALAD !!!
  • Put the pasta mixture in a greased baking dish. Sprinkle with cheese!
  • Bake in the oven for about 30 minutes! Until the spout is golden brown! Sprinkle with fresh basil again!
