Penne with leaf spinach and cream cheese

Ingredients for 2 servings:

  • 200 g whole wheat pasta (penne)
  • 1 pack of herb cream cheese, low fat
  • ½ pack of cottage cheese (spoon cheese) 0.2%
  • 1 tbsp oregano
  • 400 g leaf spinach, frozen
  • 1 tbsp yogurt, 0.1%
  • salt and pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

In a medium saucepan, combine a little milk and 1 tablespoon of yogurt and bring to a gentle boil. Then add the frozen spinach and cook until the spinach is completely soft. Then add the cream cheese and the cheddar cheese. Stir until evenly blended. Season with salt and pepper, if desired. Meanwhile, prepare the penne according to the package directions, add it to the spinach, and cook for about 2 minutes. Season to taste before serving.
