Penne with spinach

Ingredients for 2 servings:

  • 150g penne
  • 1 bunch spinach, fresh
  • ½ vegetable onion(s), finely chopped
  • 4 cloves garlic, finely chopped or squeezed
  • 4 tsp, heaped pesto, green
  • 50 ml cream or crème fraîche
  • 50 ml white wine
  • 1 tbsp honey
  • some olive oil
  • some salt and pepper
  • possibly Parmesan

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Fresh spinach with onions and garlic

Bring water to a boil. Then add salt and penne and simmer for about 8 minutes (or to your liking). Sauté the onion and garlic in a pan with olive oil. Add the finely chopped spinach and let it simmer for a few minutes. Then add the penne, pesto, cream, white wine, and honey and simmer until a sauce forms. Finally, season with salt and pepper.
