Pepper – tomato – soup with chorizo

Ingredients for 2 servings:

  • 2 bell peppers
  • 1 can of tomatoes, chopped
  • 250 g sausage (chorizo), or spicy salami
  • 2 onions, finely chopped
  • 2 garlic cloves, finely chopped
  • 3 tbsp vegetable oil
  • ½ liter vegetable broth
  • Salt
  • pepper
  • 1 pinch(s) sugar
  • 2 tsp paprika powder, sweet
  • chili powder

Working time approx. 30 minutes; Total time approx. 30 minutes

Sauté the finely chopped onion, finely chopped bell pepper, and garlic in the oil for 5 minutes. Deglaze with vegetable stock, bring back to a boil, and simmer on low heat for another 10-15 minutes. Add the tomatoes and simmer for about 10 minutes. If the soup is too thin, continue cooking uncovered. Season with pepper, salt, paprika, chili, and sugar. Serve with baguette or Vienna sausages, and garnish with a dollop of sour cream if desired. If you have any leftovers, it’s also delicious with pasta or rice.
