Ingredients for 6 servings:
- 3 cup(s) rice, Persian or regular
- 2 jars of beans, thick green bean kernels
- 3 tbsp dill tips
- 100 g butter
Instructions

Place the rice in a large pot, add water; the rice should be well covered, ideally so that the water is 1 cm above the rice. Add a little salt and place on the stove, simmering over low heat for 15-20 minutes. In the meantime, you can peel the beans. Melt the butter. Then test the rice: if the rice core is still hard but soft on the outside, only then remove the pot from the heat, tip out the water, and shock the rice with cold water. Mix the rice with the beans, add the dill tips, and a pinch of pepper. Fill the empty pot with half a cup of water, then add the rice and bean mixture. Now, using a wooden spoon handle, poke several holes all the way to the bottom of the rice. Pour a little melted butter into each hole. Put the lid on the pot, tie a towel around the lid, and let it simmer over low heat for 30-40 minutes. For the last 5 minutes, you can increase the heat a bit, so the butter will form a crust on the bottom, which is considered a delicacy in Persia. Serve with salmon and salad or shredded meat.
