Pigs Kidneys in Onion Red Wine Sauce

- 250 g Pigs – kidneys
- 2 size Red onions
- 2 Garlic cloves
- 250 ml Red wine
- 1 tbsp Cornmeal
- Lard
- Steak pepper
- Seasoned Salt
- The kidneys were ready to cook again from the butcher I trust. Just wash it briefly and you’re good to go.
- Peel the onions and garlic, coarsely chop the garlic, cut the onions into half rings.
- Fry the onions and garlic in a little lard over medium heat and dust with corn flour.
- After a few minutes, add the kidney strips and continue to fry while stirring.
- Deglaze with red wine (it was a Merlot), bring to the boil briefly, then reduce the heat significantly and gently simmer with the lid closed.
- Season to taste with steak pepper and herb salt.
