Pigs Kidneys in Onion Red Wine Sauce

  • 250 g Pigs – kidneys
  • 2 size Red onions
  • 2 Garlic cloves
  • 250 ml Red wine
  • 1 tbsp Cornmeal
  • Lard
  • Steak pepper
  • Seasoned Salt
  1. The kidneys were ready to cook again from the butcher I trust. Just wash it briefly and you’re good to go.
  2. Peel the onions and garlic, coarsely chop the garlic, cut the onions into half rings.
  3. Fry the onions and garlic in a little lard over medium heat and dust with corn flour.
  4. After a few minutes, add the kidney strips and continue to fry while stirring.
  5. Deglaze with red wine (it was a Merlot), bring to the boil briefly, then reduce the heat significantly and gently simmer with the lid closed.
  6. Season to taste with steak pepper and herb salt.
