Ingredients for 1 servings:

  • 4 handfuls of spruce or fir shoots
  • 1 liter of water
  • 1 lemon(s), organic
  • 1 kg sugar
  • 15 g citric acid

Instructions

Working time approx. 30 minutes; Rest period approx. 2 days; Cooking/baking time approx. 25 minutes; Total time approx. 2 days 55 minutes

from the light green, young corn tips

Snip off the light green tips from (your own) fir trees when they have just opened (around May-June) and wash them quickly. Wash and slice the lemons. Boil the fir tips with the lemon slices in water and simmer for at least 15 minutes. Let the brew cool, then cover and let it steep for 2 days in a cool, dark place. Stir several times daily to prevent mold from forming. After 2 days, strain the brew through a cloth and then filter through a coffee filter to remove as many suspended particles as possible. Bring the brew to a boil with the sugar, stir in the citric acid as it cools, and then immediately pour into prepared bottles. After one to two days, small clouds will form in the bottles; this is not mold, but plant matter. The color will turn slightly reddish. A refreshing syrup, delicious in chilled mineral water or water in the summer.
