Ingredients for 6 servings:
- 1 pineapple
- 150 g sugar
- 1 large onion(s), halved, sliced
- 2 ½ ml salt
- 30 ml curry powder
- 45 ml wine vinegar
- 5 ml cornstarch
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 15 minutes
Mix all ingredients except the cornstarch thoroughly. Stir over moderate heat until the sugar dissolves. Bring to a boil, reduce heat, and simmer for about 30 minutes. Dissolve the cornstarch in a little water and stir into the pineapple. Bring back to a boil briefly, pour into prepared jars, and seal.
