  • 120 g cheese, grated
  • 5 tomatoes, dried in oil
  • 3 pinches of Provençal herbs
  • Flour for the work surface and the muffin tins

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Combine flour, yeast, sugar, and salt in a bowl. Add egg, milk, and oil and knead into a dough. Set aside, covered. Finely chop the olives if necessary, and dice the salami/chorizo and tomatoes. Add everything to the dough along with about half of the cheese and knead again. Divide into six, or eight if necessary, pieces and form into balls on a floured surface. Place these in floured muffin tins and let them rise a little longer (depending on the size of the tin, the mixture will yield more servings!). Sprinkle with the remaining cheese. Bake in a hot oven at 180°C (top/bottom heat) for about 20 minutes. The pizza muffins are delicious hot or cold. Tip: Don’t like salami? Then create your own favorite pizza muffins! Just like with a pizza, you can easily vary the ingredients. Ham & pineapple and tuna & onions are great alternatives, and the muffins are also delicious as a completely vegetarian option!
