A pizza that only Balinese people could conjure. Recipe from Sanur, Bali, Indonesia

Place all the dough ingredients in a mixing bowl and knead into a firm dough. Wrap the dough in plastic wrap and let it rest in the refrigerator for about an hour. Meanwhile, mix the sauce ingredients. For the topping, wash the tomatoes and cut them crosswise into approximately 6 mm thick slices. Season the slices with salt and pepper. Cut two slices crosswise from the peeled onion and cut them into rings. Preheat the oven to 200°C (top heat). Remove the dough from the cling film, dust with flour, flatten slightly, and roll out thinly, flouring both sides thoroughly. Heat the sunflower oil in a 28 cm pan, add the dough, and cook on both sides until light brown. Place the base on a baking sheet, spread with the sauce, then sprinkle or top with Emmental cheese, then diced ham, tomatoes, and onion rings. Bake the pizza in the preheated oven until the cheese has melted. Remove the pizza from the oven, sprinkle with celery leaves, cut into 4 pieces with a rolling knife and serve hot.
