Ingredients for 6 servings:
- ½ cube of yeast
- ¼ liter of water
- 1 tsp sugar
- 50 g mixed vegetables of your choice
- 2 tsp olive oil
- 250 g flour
- 3 eggs
- 1 pinch of salt
- 100 g butter or margarine, soft
- 100 g salami, in thin slices
- 2 tbsp Parmesan
- 1 pinch of oregano
- pepper
- Oil or clarified butter for the waffle iron
Instructions
Working time approx. 45 minutes; Total time approx. 45 minutes
with yeast
Crumble the yeast and mix with the water and sugar. Keep the mixture warm for 15 minutes. Wash and finely chop the vegetables and sauté them with the oil in a small saucepan over medium heat until translucent. Sift the flour into a bowl and mix with the eggs, salt, butter, and yeast mixture to form a thin batter. Cut the salami into small cubes and add to the vegetables along with the Parmesan cheese, pepper, and oregano. Add everything to the batter and mix thoroughly. Heat and grease the waffle iron. Drop a ladleful of batter into the iron and close the lid. Bake each waffle for 2-3 minutes.
