Plaice fillet with pesto crust

Ingredients for 4 servings:

  • 800 g fish fillet(s), plaice fillet
  • 1 jar Pesto rosso or 200 g homemade
  • 4 tbsp Parmesan, freshly grated
  • 2 tbsp breadcrumbs
  • 2 garlic cloves
  • 1 lemon(s), juice
  • butter
  • Salt
  • pepper

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Mix the pesto with the crushed garlic, 2 tablespoons of Parmesan cheese, and the breadcrumbs. Wash the plaice fillets, pat them dry, and season with lemon juice. Dry again and season with salt and pepper. Place the fillets on a baking sheet lined with baking paper and spread with the pesto paste, sprinkle with the remaining Parmesan cheese, and add a few knobs of butter. Place the baking sheet in the upper third of an oven preheated to 180 degrees Celsius and cook the fish for 5 minutes. Then bake the fish for another 5 minutes using the top heat. The cooking time depends on the thickness of the fish fillets and can be varied accordingly. Of course, other fish fillets can also be prepared this way. Serve with a fresh, crisp salad and buttered potatoes.
