Ingredients for 4 servings:
- 250 g white beans
- 750 ml water
- 4 onions
- 1 tbsp butter
- 375 g bacon, streaky
- 500 g carrot(s)
- 500 g potatoes
- 500 g apple
- 2 tbsp vinegar
- salt and pepper

Bean stew with bacon, potatoes and apples
I weighed the peeled potatoes, apples, and carrots. Soak the white beans overnight. Peel and finely dice the onions. Dice the bacon, too. Peel and dice the carrots, apples, and potatoes. Sauté the diced onions in the butter until translucent, add the diced bacon, and fry. Pour about 750 ml of the soaking water over the beans and cook for a good 10 minutes. Now add the diced carrots and cook for another 15 minutes. Finally, add the diced apples and potatoes and cook until soft. Add a little more water if necessary. Finally, season the stew with salt and pepper and finish with the vinegar.
