Plum – Apple – Onion Lard

Ingredients for 1 servings:

  • 1 kg lard (flour lard = smooth lard without additives)
  • 300 g onion(s)
  • 500 g prunes (dried plums, preferably soft plums)
  • 300 g apples (Cox Orange or Boskop)

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Melt the finished Flomenschmalz in a large pot (only over low to medium heat and really stay there the whole time). Finely dice the onions and sauté in the rendered fat for about 20 minutes until soft. Meanwhile, peel, core, and finely chop the apples. Do the same with the prunes. Add them to the rendered onion fat and sauté for another 10 minutes. Fill into attractive molds and let cool. VARIATION: Plum and Apple Greaves: Finely dice 500g of Flomenschmalz and sauté in a large pot along with 500g of fresh bacon (sometimes called green bacon). Then add the ingredients as described above and continue cooking in the same way.
