Ingredients for 4 servings:

  • 200 g plums
  • 1 tbsp lemon juice
  • 50 g sugar
  • ¼ tsp cinnamon
  • ¼ tsp clove powder
  • 300 ml cream
  • 2 packets of vanilla sugar

Instructions

Working time approx. 30 minutes; Rest time approx. 6 hours; Total time approx. 6 hours 30 minutes

Wash the plums, halve them, remove the stones, and drizzle with lemon juice. Add the sugar and spices (it’s better to start with a little less clove powder and adjust the seasoning later) and puree the fruit. Place the puree in a metal bowl and freeze. Bring 100 ml of cream and the vanilla sugar to a boil, transfer to a bowl, and stir until cold in a cold water bath. Mix the cream with the plum puree. Whip the remaining cream until stiff and fold into the mixture. Transfer to an ice cream maker and freeze. It’s also possible without an ice cream maker; pour the mixture into a shallow metal bowl and freeze for 6-7 hours. Stir several times.
