Polenta with blue cheese, sour cream and fried egg

Ingredients for 2 servings:

  • 300 ml milk
  • 150 ml water
  • 150 g corn semolina
  • 50 g butter
  • 175 g blue cheese
  • salt and pepper
  • 4 tbsp sour cream
  • 4 eggs
  • 1 piece(s) butter for frying
  • extra cheese for sprinkling

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

Bring the milk, water, and salt to a boil in a saucepan over low heat. Return to medium heat and stir in the cornmeal and simmer for another 10 minutes, stirring constantly (adding a little more water or milk if necessary). Stir in the butter and crumbled blue cheese until melted. Season with salt and pepper. Heat a little butter in a large frying pan and fry the eggs into fried eggs. Divide between two plates. Top each with 2 tablespoons of sour cream and 2 fried eggs. Sprinkle with cheese to serve.
