Poppy Seed and Marzipan Crumble Cake

Ingredients
 

for the batter:

  • 300 g Flour, preferably spelled
  • 3 tsp Baking powder
  • 120 g Sugar
  • 1 pinch Salt
  • 35 g Poppy seeds, whether grated or whole
  • 150 g Orange or lemon jam
  • 4 Eggs
  • 200 g Margarine

for the crumble:

  • 150 g Marzipan
  • 50 g Sifted flour
  • 2 tbsp Sifted powdered sugar

Instructions
 

  • For the batter, stir the eggs, sugar, salt and margarine on the highest setting with the hand mixer for a few minutes until frothy. Mix the flour and baking powder and stir in briefly on a low level. Finally stir in the jam and poppy seeds briefly.
  • For the crumble, take 3 heaped tablespoons from the batter made previously. Coarsely grate the marzipan and add to the 3 tablespoons of batter with the sifted flour and powdered sugar. Process into crumble (add additional flour if necessary).
  • Pour the batter into a greased and floured loaf pan. Spread the sprinkles on top. Bake in the preheated oven at 180 degrees (or fan oven 160 degrees) on the middle rack for about 50 minutes.
  • Let the cake cool down in the tin for about 15 minutes, then carefully turn it out of the tin. Dust the cold cake with powdered sugar.
