Porcini Mushroom Consommé
The perfect porcini mushroom consommé recipe with a picture and simple step-by-step instructions.
- 1 Pc. Oxtail
- 150 g Dried porcini mushrooms
- 1 Pc. Onion
- 1 bunch Thyme
- Salt and pepper
- Madeira
- Place the oxtail and porcini mushrooms in 3 L cold water, add the unpeeled and washed onion and slowly bring everything to a boil. Skim off any rising foam. Then simmer on a low flame for an hour, add thyme and simmer for another 1 ½ hours.
- Take out the mushrooms with a slotted spoon, remove the meat. (Everything can be used for another dish).
- Strain the broth through a damp kitchen towel. Season to taste with salt, pepper and Madeira.
