Ingredients for 1 servings:

  • 4 m.-sized pork knuckle(s)
  • 80 g curing salt
  • 4 bay leaves
  • 8 g white pepper, ground
  • possibly minced meat
  • Salt

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Remove the bones from the knuckles, season with salt and pepper, and place them in 4 preserving jars. Add bay leaves. Add water until covered. Cook the jars at 98°C for 120 minutes, starting from the beginning of cooking. For an even more refined taste, fill the knuckle with strongly seasoned minced meat. Serve this cold cut feast in slices after turning it out of the jar. Excellent as a sandwich topping or with fried potatoes.
