Pork medallions with baked potatoes and tzatziki

Ingredients for 1 servings:

  • 180 g pork fillet(s)
  • 2 tsp mustard
  • 2 slice(s) ham, raw, lean
  • 2 potatoes
  • 1 tsp oil
  • ¼ cucumber(s)
  • 1 onion(s)
  • 1 pinch(s) of sugar
  • salt and pepper
  • 1 garlic clove(s), pressed
  • 4 carrots
  • 150 g low-fat yogurt

9.5 points Wrap the potatoes in aluminum foil and bake at 180°C for 45-60 minutes. Cut the pork fillet into two thumb-thick slices, brush the ham with 1 teaspoon of mustard each and wrap it around the meat, then fry the medallions in oil. Peel the carrots, cut them into medium-sized pieces, and sauté them in a little water until tender, seasoning with salt and pepper. Dice the cucumber and onion and mix with the yogurt and garlic. Season to taste with salt, pepper, and sugar.
