Wash the pork and pat dry. Then cut into slices, and then cut these into thin strips. Heat a pan with the drippings and sear the pork strips. Heat the cream sauce, add the mushrooms and pork strips. Keep the strips warm until ready to serve. Trim the Brussels sprouts, score the stalks crosswise, and cook them in well-salted water until they are still a little bite-like. Add 2 tablespoons of flour to each of the 3 dumpling doughs and knead the doughs vigorously. Form 4 dumplings from each dumpling dough. Bring 3 pots of well-salted water to a boil. Add one type of dumpling to each pot and let it simmer in gently simmering water for about 20 minutes. The dumplings are done when they float to the top. Meanwhile, preheat 4 plates. Place 1 Thuringian-style dumpling, 1 half-and-half dumpling, and 1 silk dumpling with Brussels sprouts and shredded meat on each plate. Serve immediately.
