Pork strips with mushrooms

Ingredients for 4 servings:

  • 600 g pork, lean
  • 300 g mushrooms
  • 300 g shallot(s)
  • 2 tbsp, heaped mustard, medium hot
  • 100 ml sweet cream
  • 50 ml soy sauce, dark, naturally brewed
  • 1 tsp white pepper, finely ground
  • 120 g Gouda, young, grated
  • 80 g Grana Padano (Italian hard cheese), grated
  • Worcestershire sauce
  • Fat for frying

Instructions

Working time approx. 30 minutes; Rest time approx. 5 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 15 minutes

Clean the mushrooms and shallots. Thinly slice the mushrooms and dice the shallots. Wash the meat, pat dry with kitchen paper, and cut into thin strips. Sear the minced meat in a greased, hot roasting pan, then remove and set aside. Sauté the mushrooms and shallots in the frying fat. Stir in the mustard and pepper and allow to brown. The roasting will develop a delicious flavor. Add the seared meat, cream, and soy sauce and mix well. Cover and simmer for about 30 minutes. Arrange on plates, sprinkle with the two cheeses, and grill under the preheated grill until the cheese is golden brown. Serve with Worcestershire sauce.
