Potato and cheese cookies

Ingredients for 2 servings:

  • 250 g mashed potatoes from the previous day
  • 1 egg(s)
  • 3 tbsp, heaped flour
  • 1 tbsp 8 herbs, frozen
  • 3 slice(s) Leerdammer (70 g) or other cheese of your choice
  • salt and pepper
  • nutmeg
  • Oil for frying

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes

Mix the mashed potatoes, egg, flour, and herbs in a bowl. Cut the cheese slices into strips and then into cubes approximately 0.5 x 0.5 cm. Add to the dough, stir, and season with salt, pepper, and nutmeg. If the dough is too wet, you may need to add a little more flour. Heat a little oil in a pan. Drop the dough a tablespoon at a time into the pan and fry over medium heat until golden brown on both sides. Don’t set the heat too high, or the cookies will brown too quickly.
