Ingredients for 4 servings:

  • 400 g potatoes
  • 250 g mushrooms
  • 150 g bacon, streaky
  • 2 tbsp olive oil
  • 100 ml white wine
  • 3 tbsp flat-leaf parsley, chopped
  • salt and pepper

Instructions

Peel and slice the potatoes. Cut the bacon into strips and fry in hot oil. Add the potato slices and sliced ​​mushrooms, season with salt and pepper, and deglaze with white wine. Heat over high heat while stirring until the wine evaporates. Then reduce the heat and simmer, covered, for about 25 minutes. Stir occasionally and check the liquid level. If it’s too low, add a few tablespoons of water. Finally, stir in the chopped parsley and serve.
