Potato and vegetable rösti with tzatziki

Ingredients for 2 servings:

  • 2 m.-sized carrot(s)
  • 5 m.-sized potatoes, mainly waxy
  • 2 eggs
  • 150 g cheese, grated
  • 50 g celeriac
  • 2 tbsp, heaped herb mix, Mediterranean
  • salt and pepper
  • 500g tzatziki

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 40 minutes

Peel the vegetables and rinse with cold water, then coarsely grate them using a grater or regular grater. Place the grated vegetables in a bowl. Then add the eggs, grated cheese, and seasonings. Mix everything well. In the meantime, preheat the pan with a little oil. Shape the mixture into rösti as desired and place them in the pan. Fry until nicely browned on the sides, then turn. Place the rösti on a plate covered in a kitchen towel and let it drain. Arrange the rösti nicely and serve with the tzatziki. Total cost: approximately €5.
