Potato blini – great side dish

Ingredients for 4 servings:

  • 500 g potatoes, floury
  • 2 egg whites
  • 2 tsp cornstarch
  • 2 tsp flour
  • 1 pinch of baking powder
  • salt and pepper
  • nutmeg

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

An alternative to potato pancakes. Ideal with roasts and hearty sauces.

Peel the potatoes and boil them in salted water. Mash the potatoes. Beat the egg whites until stiff. Add the egg yolks, starch, flour, and baking powder to the potato mixture, and finally fold in the beaten egg whites. Season to taste. Heat a little oil in a pan and, using a tablespoon, place small blinis in the pan. Fry on both sides and keep warm.
