Ingredients for 4 servings:
- 1 ½ kg potatoes, peeled, finely grated
- 2 onions, finely chopped
- 1 roll, old
- ½ liter of milk
- 150 g bacon, streaky, roughly diced
- Salt
- pepper, black
- nutmeg
- Parsley, chopped
- oil

Potato casserole from the Eifel
Preheat oven to 200°C. Soak the rolls in milk in a bowl, then mash them with a hand blender. Add all the other ingredients, mix well, and season as desired. Add enough oil to a roasting pan to lightly coat the bottom. Pour in the potato batter. Place the casserole in the oven and bake for approximately 1.5 hours, depending on the thickness (test for doneness). Apple compote is delicious with it.
