Potato casserole with smoked pork

Ingredients for 4 servings:

  • 1 kg potatoes, small
  • 1 clove(s) garlic
  • 400 g smoked pork chop, boned
  • 1 stalk(s) leek
  • 30 g margarine
  • 40 g flour
  • 750 ml milk
  • 100 g cream
  • 5 tbsp cheese, grated
  • Salt and pepper, white
  • ½ bunch parsley

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Wash the potatoes and boil for about 15 minutes. Finely dice the garlic. Wash the smoked pork, pat dry, and dice. Cut the washed spring onions into rings. Drain the potatoes, rinse, and peel them. For the sauce, melt the fat in a saucepan. Sauté the garlic until translucent. Dust with flour and sauté. Deglaze with milk and cream, and bring to a boil. Dice the smoked pork and stir into the sauce along with the spring onions and cheese. Simmer gently for about 10 minutes. Season to taste with salt and pepper. Wash and chop the parsley. Stir into the sauce. Mix in the potatoes and transfer to an ovenproof dish. Sprinkle with grated Gouda cheese. Bake in a hot oven (180°C fan oven) for about 15 minutes until golden brown.
