Ingredients
 

  • 300 g Potatoes peeled fresh, floury variety
  • 120 g Celery bulb, cleaned and diced
  • 120 g Apple fresh, peeled, pitted, diced, sour variety
  • 0,25 tsp Thyme
  • Salt
  • Black pepper from the mill
  • 1 tbsp Onion cubes
  • 300 ml Cream
  • 2 tbsp Butter
  • 150 g Porcini mushrooms fresh, cleaned, sliced
  • 300 g Fresh chorizo ​​sausage, for grilling or roasting
  • Olive oil

Instructions
 

  • Chorizo ​​is a Spanish sausage spiced with lots of paprika, which is available as a hard sausage but also for roasting, similar to a German bratwurst. For this dish, please only use the fresh variant. If you cannot get it, another fresh one , take spicy bratwurst.
  • Pour cream over the potatoes, onions, apple and celery in a saucepan. Season with salt, thyme and pepper, cover and cook for about 20 minutes. Mash coarsely. Work in butter and season to taste. Set warm.
  • Fry the chorizo ​​in olive oil in one pan. In another pan, fry the porcini mushrooms quickly in butter or olive oil. Season with salt and pepper.
  • Place the mashed potatoes, celery and apple on preheated plates, cover with the sausage and spread the mushrooms on top.
