Ingredients for 2 servings:

  • 1 bell pepper(s), green
  • 1 bell pepper(s), red
  • 300 g mushrooms
  • 500 g potatoes
  • 20 g tomato paste
  • 20 ml balsamic vinegar
  • 2 tbsp paprika powder
  • 500 ml vegetable stock
  • 20 g cornstarch
  • some caraway
  • salt and pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Dice the potatoes and cook with tomato paste, vegetable stock, vinegar, and paprika. Slice the peppers and mushrooms and add them after 10-15 minutes. Then let them cook for another 15 minutes. Season with caraway, salt, and pepper. Stir in the cornstarch and let it thicken. Serve.
