Potato pan with green asparagus

Ingredients for 4 servings:

  • 500 g potatoes, waxy
  • salt water
  • 500 g asparagus, green
  • 150 g ham
  • 1 onion(s)
  • 1 slice(s) ginger, optional
  • 3 eggs
  • 1 pinch(s) of salt and pepper
  • 1 pinch(s) of sugar
  • n. B. herbs
  • some oil

Instructions

Working time approx. 40 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 10 minutes

Wash, peel, and quarter the potatoes and boil in salted water for 15-20 minutes. Test for doneness. In the meantime, wash the green asparagus and trim off the woody ends. Peel the onions and slice into rings. Dice the ham and ginger. Heat a pan with oil (I like to use olive oil, but any oil will do). Fry the asparagus for 3-4 minutes, add the onion, ham, and ginger, and fry. Sprinkle a pinch of sugar over the asparagus and mix well. Now add the cooked, drained potatoes and fry briefly. Crack the eggs over the asparagus and stir everything together quickly. Season to taste with salt, pepper, and herbs.
