Ingredients for 4 servings:
- 1 pizza dough, ready
- 3 waxy potatoes
- 4 m.-sized eggs
- 1 ball of buffalo mozzarella
- 3 rosemary sprigs, fresh
- salt and pepper
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 30 minutes
Boil the potatoes in their skins and let them cool. Roll out the pizza base (room temperature) on a baking sheet and open the edges. Whisk the eggs and brush a small portion of them thinly over the pizza base. Grate the mozzarella and spread it over the pizza base. Grate the potatoes and spread it over the pizza base. Season the pizza topping with salt and pepper. Spread the rosemary sprigs over the pizza topping. Pour the egg mixture over the pizza. Bake the pizza at 170°C fan-assisted oven or 200°C top/bottom heat on the bottom rack for 30-40 minutes.
