Potato Quiche

  • 200 g Flour
  • Salt
  • 1 piece Egg
  • 2 piece Egg yolk
  • 1 tbsp Oil
  • 3 piece Fresh onions
  • 800 g Potatoes
  • 0,25 l Milk
  • 200 g Creme fraiche Cheese
  • 150 g Cheese
  • 2 tbsp Butter
  • Cayenne pepper
  • Nutmeg
  1. Make a shortcrust pastry from flour, salt, egg, egg yolk and oil. If too dry, add a little water. Finely dice the onions, peel and grate the potatoes. Mix the milk, creme fraiche with cayenne pepper and grated nutmeg and season to taste.
  2. Line the baking dish with the batter, then fill the onion and potato mixture into the mold and then pour the milk mixture over it. Then grate the cheese and pour over the quiche, then put the butter in small pieces on top. The whole thing in the oven at 200 ° on top / bottom heat and bake for 40 minutes, then the quiche should be done and already golden brown on top.
