Potato salad with cucumbers

Ingredients for 5 servings:

  • 500 g potatoes
  • 2 m.-sized onion(s)
  • 2 cucumbers
  • 2 jars of mayonnaise
  • oil
  • Vinegar
  • Salt
  • pepper

Instructions

Working time approx. 40 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 40 minutes

Boil the potatoes with their skins on. Peel the cucumbers and slice them thinly. Place them in a bowl and sprinkle with a generous pinch of salt. Cover and let stand for about 1/2 hour. Peel the onions and dice them finely. Place 1 1/2 jars of mayonnaise in a large bowl, mix with a generous splash of vinegar, and season with salt and pepper. Add the diced onions and mix again. Squeeze the cucumbers well and mix them into the sauce. Now just peel the potatoes, slice them, add them to the bowl, and mix everything together. Finally, add a little more mayonnaise if desired (it always depends on how much sauce you want and the consistency of the potatoes). Let the salad stand for about 1/2 to 1 hour and season again with salt and pepper just before serving.
