Ingredients for 6 servings:

  • 16 potatoes
  • 2 carrots
  • 1 stalk(s) leek
  • 1,250 ml vegetable broth, light, or water
  • 1 tsp thyme, dried
  • 1 tbsp lovage, dried
  • 200 ml cream
  • salt and pepper
  • 1 pinch of nutmeg

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Peel the potatoes and carrots, wash the leek, cut everything into small pieces, and place them in a saucepan with the vegetable stock, lovage, and thyme. Bring to a boil and simmer for 20 minutes. Pour in the cream, puree, and simmer over low heat for about 5 minutes. Season with a pinch of freshly grated nutmeg, salt, and pepper. Homemade pancakes, quartered, pricked with a fork, and then flipped over, are particularly delicious. Hot dogs are also good.
